I was really trying to save this for St. Patrick’s Day. I mean, just look at that colour? Kinda the perfect recipe to celebrate!
But after making it three times in the span of two days, I just couldn’t wait.
I love pesto of all shapes and sizes, but this one has moved to the top of the list. You probably have all the ingredients you need for it right now in your fridge and pantry. Almonds, goat cheese, garlic, spinach, canola oil, and balsamic vinegar. I know, it’s that simple.
And you know I always have a package of tortellini in my freezer. So if you are like me, you are only 8 minutes away from having this pretty little bowl on your dinner table.
No need to wait for St. Patty’s Day to enjoy this gorgeous bowl!

Cheese Tortellini with Spinach and Goat Cheese Pesto

Ingredients
- 1/2 cup almonds (toasted)
- 1 140g log goat cheese
- 5oz baby spinach
- 1 clove garlic
- 1 Tbsp balsamic vinegar
- 1/4 Cup + 2 tbsp canola oil
- 1 300g package cheese tortellini
Note
This recipe will make more than enough pesto to coat the tortellini. Extra will keep in the fridge for a couple of days and is delicious spread on some toast or crackers. You could swap out the tortellini for your favourite pasta, if desired.
Directions
1. | In a food processor, add almonds, goat cheese, spinach, and garlic clove. Process until finely chopped, scraping down sides of machine if necessary. |
2. | Add balsamic vinegar and process again. With processor running, slowly drizzle in oil until mixture is smooth and fully combined. Taste and season with salt and pepper. |
3. | Cook tortellini according to package direction and reserve about 1/2 cup cooking water. Toss with pesto to coat, adding pasta water a little at a time to thin out the sauce if necessary. Serve immediately. |

Hi, I noticed in reading some of your emails that yall say its ok to eat cheese if you are Type ll diabetic. I love cheese and would love to be able to eat it, however, in another program for controlling diabetes I was in, they said to cut out ALL dairy products including cheese. I see yall have cheese snacks, cheese in recipes, etc. Which is correct? And if I can eat cheese, what kind? Thanks!

Cheese should be able to fit as part of your diet as a person living with type II diabetes, but without knowing your full medical history we can’t make specific recommendations for you.
