Seems as though I have a little thing for chickpeas these days, no? While I do love this legume, I also love a good sale and thus, stocked up on multiple cans when on a recent grocery store visit. So what’s a girl to do but make some hummus? Just like the saying goes, when life gives you lemons….
But this not your ordinary hummus… this is extra special delicious hummus. Made extra special by the addition of buttery and rich roasted garlic. A whole head to be exact! Roasted garlic is not only delicious in hummus, but can be used as a spread for some crusty baguette, tossed with hot pasta and olive oil for a simple sauce, or rubbed over grilled chicken, salmon, or veggies.
It’s also super simple to take the regular old head of garlic and turn it into this golden beauty you see before you.
Simply cut off the top and wrap in foil.
Place in a 400 degree oven for about 30-45 minutes, or until nice and soft.
Unwrap and let it cool until you can easily pick it up. Give it a good squeeze, and watch the tender bulbs fall away.
Once the garlic gets blended with the rest of the ingredients, you will be rummaging your fridge trying to find anything you can to dip into this bowl of creamy golden goodness. Hummus makes an excellent afternoon snack, pre-dinner app, sandwich spread, and can even be thinned out with a little more lemon juice and olive oil for a thick and creamy salad dressing.
Roasted Garlic Hummus

Ingredients
- 1 head garlic (roasted)
- 1 can chickpeas (drained and rinsed)
- 1 Tbsp olive oil
- 1 lemon (juiced)
- 1/2 Tsp cumin
- 1/2 Tsp salt
- 1/4 Tsp pepper
- 1/4-1/2 Tsp sriracha
Note
White beans or black beans would make a great substitute for the chickpeas. You can also flavour your hummus with many other additions: try adding a whole roasted pepper for added colour and flavour, or a seeded jalapeno for some extra heat!
Directions
1. | Squeeze roasted garlic cloves into food processor. |
2. | Add chickpeas and remaining ingredients and process until smooth. Taste and adjust seasoning. |
