Can you smell that? It’s the smell of bread – hot out of the oven. I mean, is there really anything better than the smell of a freshly baked, still warm loaf of bread? I think not. Homemade bread seems to be one of those things people think is just too hard to make at home. I think we dispelled that myth with our no knead variety.
This loaf is certainly delicious, but also requires some planning ahead of time to let the dough rest and rise and get all cozy. But what happens when you walk in the door at 5 o’clock, pull out your batch of minestone soup from the freezer, and start to panic that you have not an ounce of fresh bread in the house to sop up this delicious meal?
Well, fear not! This rosemary beer bread comes together in about 10 minutes and when you’re done putting the finishing touches on your meal, the bread is hot and ready to be devoured.
And you likely have all the ingredients in your kitchen at this very second! Flour? Check! Salt? Check! Sugar? Check! Beer….do I even need to ask?
I do find the best results come from a wheat beer (Millstreet Wit is my current favourite) but you could use anything you like to drink. Not a fan of rosemary? Thyme would also be excellent, or simply leave the herb out all together.
But absolutely under no circumstances should you leave out the topping – the olive oil and coarse salt crusted top is pure crunchy and salty goodness. There may have been an incident with a fresh loaf missing it’s top a day or two after being baked…
This loaf is not only delicious fresh the day its made and topped with a bit of butter, but it makes excellent croutons, bread crumbs, and grilled cheese sandwiches a day or two later.

Ingredients
- 1 1/2 Cups whole wheat flour
- 1 1/2 Cups all purpose flour
- 1 Bottle (350ml) beer (wheat is my beer of choice)
- 3 Tbsp sugar
- 1 Tbsp baking powder
- 1 1/2 Tsp salt
- 1/2 Tsp dried rosemary
Topping
- 1 Tsp olive oil
- 1/2 Tsp kosher salt
- 1/2 Tsp dried rosemary
Note
You could use other dried herbs such as thyme, basil, or oregano in the bread, or leave out the herbs all together. Fresh herbs would also be nice - just double the amount.
Directions
1. | Preheat oven to 350 degrees and spray a loaf pan with cooking spray. |
2. | Mix together flours, baking powder, salt, sugar and rosemary. Mix in beer until combined. Place in loaf pan and make sure it's evenly distributed. |

3. | Brush or pour on olive oil and sprinkle with salt and rosemary. |
4. | Bake in the oven for 80 minutes. Top should be nice and brown. Let it cool for at least 10 minutes until you take it out of the pan. |

This sounds delish. I just got around to making your no knead bread and it was fabulous! And GONE! Second batch arising now.
Too bad we aren’t beer drinkers here…think I could use red wine instead?!?!? 🙂
