It occurred to us that we’ve really been focusing on vegetarian recipes, but I swear, we’re omnivores!
Let’s ease in to animal products shall we?
Fish is on regular rotation in both our homes, and the usual suspects for weeknight cooking include salmon, trout and tilapia.
Salmon has great flavour and texture and it’s a little more forgiving in terms of cooking time. Since it’s fillets are thicker, it tends to stay moist if you cook it a little too long. A great beginner fish!
While many other cooking techniques exist, all of these recipes involve baking salmon. In my opinion it’s a foolproof way to cook fish to perfection.
This recipe for salmon cakes involves a little pre-planning and some time, but they’re a cinch to put together and well worth it. Here they’re topped with a lemon and garlic infused greek yogurt and served with an arugula, goat cheese and roasted beet salad.
Salmon cakes

Ingredients
- 1lb fresh salmon fillet
- 1 Large egg
- 1/4 cup chives (finely chopped)
- 2/3 cups panko (japanese style) breadcrumbs (divided)
- 1/2 cup frozen corn
- 2 tablespoons whole grain mustard
- 2 tablespoons mayonnaise
- 1 teaspoon lemon zest
- juice from 1/2 lemon
- salt and pepper to taste
- canola oil for pan frying
Note
If you're a saucy fellow, you can top these cakes with lemon and garlic infused yogurt: 1/2 cup greek yogurt, 1 tsp lemon zest, 1 Tbsp lemon juice and 1/2 tsp finely minced garlic. They're also great on their own.
Directions
This asian inspired salmon is a definite week-nighter. Dinner on the table in less than 20. Boom. Here it’s served with some simple steamed cauliflower and smashed edamame beans with a drizzle of sesame oil.
Asian Inspired Salmon
Ingredients
- 1lb fresh salmon fillet
- 2 tablespoons hoisin sauce
- 2-3 green onions (white and light green parts, sliced thinly)
- 2 teaspoons sesame seeds (toasted)
Note
To toast sesame seeds, in a frying pan over medium heat stir them constantly until golden brown. I like to do bigger batches all at once to have them on hand for a tasty addition to sides and salads.
Directions
1. | Preheat over to 400F |
2. | Spread hoisin sauce over salmon |
3. | Top salmon with green onions and sesame seeds |
4. | Bake for 15 minutes |
The easiest of them all is this maple-mustard salmon. Three ingredients, Including the salmon! Serve with rice, quinoa or potato (regular or sweet) and your choice of green veg.

- 1 lb fresh salmon fillet
- 2 tablespoons pure maple syrup
- 2 tablespoons whole grain mustard
Note
If you have the foresight or time, marinating the fish with the maple-mustard topping overnight adds even more great flavour.
You can also try topping the fish with 1/3 cup of panko (japanese style) breadcrumbs before baking for a satisfying crunchy texture.
Go on and go now. Get to that fish monger.

Yummy! We made mushroom risotto with grilled salmon for dinner on Friday nite, and it was so good. Know what you mean about eating this good fish!
