We’ve got apples folks.
After an early frost devastated the 2012 Ontario apple crop in which some orchards lost up to 90% of their harvest, 2013 is back…with a bumper crop!
So get out there and get pickin’.
Either that or look for a ‘product of Ontario/ Canada’ when you’re shopping ‘k?
Then, rush home and make these. Because they’re SO good and SO easy. And SO good.
Choose an apple variety that bakes up well and holds it’s texture when cooked. I’ve had good success with McIntosh, Spartan, Golden Delicious, Empire and Northern Spy apples.
Any dried fruit and nut combo would work well for this, so choose your fave. Try to choose dried fruit without added sugar. Generally, raisins and dried apricots come unsweetened, but you may have to do a little searching for other varieties.
Once baked up these taste as decadent as apple pie but hold up a whole lot better from a nutrition standpoint.
With this batch, I placed each apple in a small round reusable plastic container half full of 2% vanilla yogurt for a perfect snack at work.
Think apple pie and vanilla ice cream. With zero guilt.
Wait.
For the record, you should never feel guilty about eating apple pie and ice cream. Just don’t bring it for lunch every day.

Baked Apples

Ingredients
- 4-5 Medium or Large baking apples
- 1/4 cup chopped pecans
- 1/4 cup raisins
- 1/4 cup dark brown sugar
- 1/2 teaspoon cinammon
- 1/8 teaspoon fine salt
- 1 tablespoon butter (divided)
Directions
1. | Preheat oven to 375 degrees F |
2. | Using a paring knife and a small spoon, remove the core of the apples to about a 1/2" from the bottom. |
3. | In a small bowl, combine pecans, raisins, sugar, cinnamon and salt. Fill each apple core with a slightly overflowing amount of filling. |
4. | Top each apple with a sliver of butter |
5. | Place apples in a baking dish, add about 3/4 cup of warm water to the bottom of the dish and bake for 30-40 minutes (depending on the size of your apple. The end result should be soft but still slightly firm) |
6. | Serve with vanilla ice cream or yogurt, or on it's own. |
