Pumpkin and Almond Butter Bars

Ingredients
- 1/2 cup canned pumpkin puree
- 1/2 cup natural almond butter (or natural peanut butter)
- 1 egg
- 1 Tsp vanilla
- 1/4 Tsp salt
- 1/4 cup maple syrup
- 1/2 Tsp baking soda
- 1 Tsp cinnamon
- 1/4 Tsp ground ginger
- 1/4 cup pumpkin or chocolate chips
- 1/4 cup unsweetened shredded coconut
Note
These bars are a little delicate so if they are falling apart, place them in the fridge to firm up overnight. They are great for breakfast with some extra almond or peanut butter, plain as a snack, or with some vanilla ice cream for dessert!
Directions
1. | Preheat oven to 350 degrees and spray and 8 x 8 pyrex with cooking spray. |
2. | In a large bowl mix together all ingredients except for pumpkin. Once combined, pour into pyrex and top evenly with coconut. |
3. | Bake for 30 minutes, or until lightly browned and firm. Let cool for at least 20-30 minutes before cutting into squares. |
