Snap Pea Slaw with Sesame-Miso Dressing

Ingredients
- 1 Pound snap peas (thinly sliced on a bias)
- 1/2 head red cabbage (shredded)
- 5 radishes (quartered and thinly sliced)
- 4 green onions (chopped)
- 3 Tbsp sesame seeds (toasted)

- 1/2 Tbsp ginger (minced)
- 1 clove garlic (minced)
- 1 Tbsp tahini
- 2 Tbsp yellow or brown miso paste
- 1 Tbsp honey
- 1/4 cup rice vinegar
- 2 Tbsp sesame oil
Note
This savoury miso dressing makes this salad absolutely addictive! But if you find you have a bit too much dressing, it would also be delicious as a dip for veggies or a marinade/sauce for chicken or fish.
Directions

1. | Combine all dressing ingredients in a blender or food processor and set aside. |
2. | In a large bowl, toss together snap peas, radishes, onions, and cabbage. Add sesame seeds and toss to combine. |
3. | Add dressing and toss to coat. |
