Thai Mango Salad

Thai Mango Salad

Ingredients

  • 2 firm mangoes (peeled, pitted and julienned)
  • 1 Small red pepper (seeded and thinly sliced)
  • 1 cup shredded carrot
  • 1 shallot (thinly sliced)
  • 1/3 cup roasted peanuts (chopped)
  • 10 basil leaves (or about 1/4 cup thinly sliced)

Dressing

  • zest of 1 lime
  • 2 tablespoons fresh lime juice
  • 4 teaspoons fish sauce (or soy sauce for a vegetarian version)
  • 1 tablespoon canola oil
  • 1 tablespoon honey
  • 1 thai chili (thinly sliced - or 1/4 tsp red pepper flakes)

Directions

1. In a small bowl, whisk together all of the ingredients for the dressing.
2. Toss mangoes, peppers, carrots and shallots with dressing.
3. Just before serving, toss salad with basil and garnish with peanuts.
