Combine hoisin sauce, soy sauce, and sesame oil and place in a zip lock bag with chicken. Let marinade in fridge overnight or for at least 2-3 hours.
Preheat a grill pan over medium high heat and spray with cooking spray. At the same time, pre-heat your oven to 400 degrees and line a baking sheet with parchment.
Grill chicken on grill pan for about 5-7 minutes per side. Transfer to baking sheet and bake for about 10 minutes, or until fully cooked through.
