I thought that since we are all staying home every day, the weekday morning rush would be a little less hectic.
Well, I was wrong.
If anything, it’s the same level of insanity, maybe even a tad more. Trying to get ready for a long
hour day of homeschooling a 6 and 4 year old while trying to keep a teething 7 month old occupied has it’s challenges. And since my brain isn’t running at full speed these days, having some easy, big batch, make-ahead breakfast options at my fingertips sure helps to make these mornings a little bit more manageable. That and an extra large mug (or two) of coffee.

If breakfast and pizza had a baby, this would be it! You’ve got bacon, eggs and cheese all wrapped up in a buttery puffed pastry crust. Need I say more?!
