Braised BBQ Beef

Ingredients
- 2 Pound chuck roast, flank steak, or any other cut of beef you enjoy braised
- 1 large onion
- 28 Ounce can whole tomatoes
- 1 bottle your favourite bbq sauce
- 1/2 Tbsp olive oil
Note
I love this as a sandwich between a soft and "squishy" bun. But, you could also serve the meat over mashed potatoes, rice, or polenta to soak up all that delicious sauce.
Directions
1. | Heat a large, heavy pot or dutch oven on medium heat. Add onions and cook until translucent. |
2. | Add the tomatoes, roughly chopping them in the pot. Add the bbq sauce and increase heat to medium high and simmer for about 10 minutes. Stir often to prevent the liquid from burning. |
3. | Add the beef and bring to a low simmer. Cover and cook for about 3 hours. |
4. | Remove the beef from the pot and use a fork and knife to cut it into small pieces. |
5. | Increase the heat on the pot to medium-high, uncover, and simmer until the sauce is thick, stirring often again so it doesn't burn. |
6. | Add meat back to the pan and warm both through. |
