Tzatziki

Serves Makes about 2.5 cups

Ingredients

  • 1.5 cups plain greek yogurt
  • 1 cup grated english cucumber (about 1/2 a cucumber)
  • 1 Small clove garlic (grated or finely minced)
  • The zestof 1 lemon
  • 1.5 tablespoons fresh lemon juice
  • 1.5 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt (or more to taste)
  • 1/8 teaspoon fresh ground pepper (or more to taste)

Optional

  • 2 tablespoons chopped fresh dill

Directions

1. Combine all ingredients in a bowl. Allow to sit for at least an hour before serving, but over night is better.
