This post is an updated version from January 2013. It’s a simple and delicious banana bread that we’ve simplified even more and tweaked the recipe a bit to make it even more delicious. As our food philosophies have changed over the years, we thought this post could use a bit of an update.
Back when we were newbie bloggers in 2013 and before we became mammas, we viewed this blog of ours as a strictly healthy recipe blog. We had categories like “How To Snack Healthy” and desserts were listed under “You Only Live Once.” (for the record, you can eat dessert whenever you want!). Now, not to say the newer recipes you find here today are not healthful, but that really isn’t the focus. In fact, our aim is always to create delicious, simple, family friendly recipes that can be created without the need for any special equipment and cooking techniques. That’s the number one priority.
When reading over some of our older posts, we kind of want to cringe. We list low fat coconut milk in the ingredient list, we talk about using low fat cheese, or as was in the original banana bread recipe, I mentioned using some apple sauce to cut down on the fat. My how times have changed.
Now, not only as a mom, seasoned recipe developer, and proponent of relaxed eating, I know that fat adds flavour, fat makes you feel full, and most importantly, tastes delicious. That sort of diet talk does not have a place on this blog or any where for that matter. Labelling foods as “good” or “bad” or even “healthy” and “unhealthy” sets you on a path of restriction, food rules, and an all round negative relationship with food. Not fun and definitely not “healthy.”
So, on a mission to revamp some of those older posts that don’t really reflex our motto of “relaxed eating” anymore, I thought this Banana Bread recipe was a good place to start! It’s not only even more delicious, but it’s made with one bowl! Another thing that’s changed, the need to create recipes with as few bowls to wash as possible. Because no one has got the time or patience for that.
And did I mention I’ve added chocolate? Because what on earth was I thinking before?!
