Vegetarian Chili

Vegetarian Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 Medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 stalks celery (chopped)
  • 1 Medium green pepper (chopped)
  • 2 Medium zucchini (chopped)
  • 3 cups mushrooms (sliced)
  • 1 28 ounce can crushed tomatoes
  • 1 19 ounce can chickpeas/ kidney beans (undrained)
  • 1 19 ounce can black beans (drained and rinsed)
  • 3 tablespoons tomato paste
  • 2-4 tablespoons chili powder

Optional

  • fresh/pickled jalepenos, chill flakes, cayenne pepper or hot sauce (to taste)

Directions

1. Heat olive oil over medium heat in a heavy bottomed pot or dutch oven
2. Add onion, celery, garlic and sauté until softened. About 5 minutes
3. Add mushroom, peppers and zucchini and cook for another 3-5 minutes.
4. Add the remainder of the ingredients, reduce heat to low and simmer, covered for at least 15 minutes and up to an hour.
