I’ve kind of fallen off the meal plan wagon.
I don’t know if it’s just me, but March is kicking my butt already, and we aren’t even halfway through. So, sitting down to plan and prep on the weekend is now on the bottom of my to-do list. I’ve been using my tips for how to grocery shop without a plan and let me tell you, they are a lifesaver.
Also a lifesaver? Taco night. It’s one of those meals that happens weekly in my house because: a. it’s a do it yourself-er and you know how we feel about those and b. TACOS! Who doesn’t love tacos?
Salmon may not scream “taco filling” but it should. The salmon is topped with a mixture of sweet chilli sauce and soy sauce and roasted until it is so tender and falling apart. The toppings are a simple slaw, some sliced avocado and more sauce. THAT’S IT!
Sure, you could pre-make some of the tacos. But serving meals up family style and letting everyone top their own is one of our top tips for making family meals enjoyable. If salmon is new for your kiddos, no problem. They can load up on the avocado and add some sour cream and salsa if you like. If they don’t add salmon today, don’t sweat it. Maybe they will tomorrow.
And that just means more sweet and salty delicious salmon for you!

Asian Roasted Salmon Tacos

Ingredients
- 1.5 Pounds salmon
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 1/2 lime (juiced)
- 5oz bagged coleslaw mix
- 2 green onions (chopped)
- 1 Tbsp sesame oil
- 1 Tbsp apple cider vinegar
- 1/2 Tsp salt
- 2 avocados (sliced)
- chopped cilantro (to garnish)
- whole wheat or corn tortillas
Note
This is a great recipe to feed a crowd as it can easily be doubled or tripled to make a fun taco bar. If you like things a little spicy, add some hot sauce and serve with an extra squeeze of lime.
Directions
1. | Preheat oven to 425 degrees and line a large baking sheet with parchment paper. Place salmon on top, flesh side up. |
2. | In a small bowl, mix together sweet chili sauce, soy sauce and lime juice. Pour half of the sauce over the salmon, spreading it so all of the salmon is coated with sauce. Reserve remaining sauce. |
3. | Bake salmon in the oven for about 15 minutes, until it flakes easily wth a fork and is cooked all the way through. Remove and flake with a fork to break into bite size pieces. |
4. | While salmon is cooking, mix together slaw, green onions, sesame oil, apple cider vinegar and salt. |
5. | Top tortillas with some slaw, salmon, avocado and a drizzle of reserved sauce. Garnish with chopped cilantro if desired. Or let everyone assemble their own! |
