I don’t plan to ‘sell’ you on this recipe.
Because a comforting bowl of creamy and delightfully cheesy soup is all anyone really needs when winter is looming.
It’s also pretty much guaranteed to be a family favourite.
Homemade cheese sauce is my 4 year old’s Achilles heel, and this soup is a close cousin of what I would use for my stovetop mac & cheese.
You could certainly use your favourite cheese, but we’re big fans of older, sharp cheeses over here. Feel free to make this vegetarian with vegetable broth, too. If you’re feeling really wild, substitute the broccoli with cauliflower, you animal.
And as always, if you’re feeding this to a famjam of selective eaters, you can easily be considerate without catering, by serving some plain broccoli, carrots (raw or cooked) and cheese on the side. Serve with some crackers or crusty bread and you’ve got a super satisfying meal.

Creamy Broccoli and Cheddar Soup

Ingredients
- 4 tablespoons butter
- 1 Small onion (finely diced)
- 1 clove garlic (minced)
- 1/4 cup flour
- 2 cups low sodium chicken broth
- 1.5 cups whole milk
- 1/2 teaspoon mustard powder
- 1/2 teaspoon salt (or more to taste)
- 3 cups chopped broccoli (bite sized pieces)
- 2 Medium carrots (peeled, quartered and thinly sliced)
- 100g old cheddar cheese (about one cup, grated)
Directions
1. | Melt butter in a large saucepan over medium-low heat. Add onions and garlic and sauté until softened, 4-5 minutes. |
2. | Sprinkle flour over butter and whisk until incorporated. Cook for about a minute, until flour and butter are bubbling. |
3. | Slowly add chicken broth and then milk, while whisking. Bring to a simmer and cook until soup begins to thicken. Whisk in mustard powder and salt. |
4. | Add broccoli and carrots. Simmer for about 10 minutes, until carrots are cooked through. |
5. | Remove from heat, add cheese and stir until incorporated. Season with more salt and pepper to taste. Serve right away. |
