Weekends in my house mean one thing – pancakes.
If you follow us on Instagram this really shouldn’t come as a shock. Nearly every Saturday or Sunday morning there will be a story of some sort of pancake breakfast coming your way. Even Erin’s husband has commented, and I quote, “Oh must be Saturday, Dara is making pancakes again!”
Weekend breakfast with my fam has to be one of my most favourite times of the week. During the week there is no family breakfast. Who has time for that?! It’s a struggle simply to get everyone out of the house on time, let alone make sure we are all fed! But weekends? Weekends are the time to sit around the breakfast table, preferably still in pyjamas, and enjoy a leisurely breakfast together. And pancakes are usually my kids’ breakfast of choice.
And I’m not complaining. Especially since I’ve discovered these Fluffy Greek Yogurt Pancakes.
It should come as no surprise that my favourite part about these Fluffy Greek Yogurt Pancakes is the fact that you only need one bowl. Yup, always looking for ways to avoid washing dishes around here.
Pancakes of any kind are a great recipe to get started cooking with your kids, but these ones are especially simple making them even more kid friendly. Let your kids measure, mix and add their favourite mix-ins. I’ve gone with strawberries here to finish up the last of the local sweet berries, but blueberries would be FANTASTIC right now!
The recipe is pretty fool proof, having tested it many MANY times, and I promise you will end up with the fluffiest pancakes pretty much no matter what happens, which is always a requirement of mine for any pancake recipe.
These pancakes are delicious topped with a pat of butter and a generous drizzle of maple syrup. Worth turning on your stove in this heat wave – promise!

Fluffy Greek Yogurt Pancakes
Ingredients
- 1 1/2 Cups plain Greek yogurt (2 % or higher)
- 2 eggs
- 1 Tbsp maple syrup
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 2 Tsp baking soda
- 1/8 Tsp salt
- 1/2 cup blueberries, chocolate chips, or chopped strawberries (if desired)
Note
You can easily add your favourite pancake mix-ins to this batter or enjoy them plain.
Directions
1. | In a medium bowl whisk together yogurt, eggs, and maple syrup. Add flour, baking soda, and salt and mix until just combined. |
2. | Add mix-ins and stir until combined. Preheat a skillet over medium heat and spray with cooking spray. |
3. | Drop about 1/4 cup pancake batter onto pan and cook until bubbles form on top surface, about 3-4 minutes. Flip and cook for another few minutes until cooked through. |
4. | Remove and serve immediately with extra maple syrup and a pat of butter. |
