Why Is This Important
Ninety percent of the world’s fish stock are now fully fished or overfished. Yet fish is the main source of animal protein for billions of people and more than 1/2 billion people rely on seafood for their income.
So that’s where MSC comes in. MSC is a global non-profit organization created to address and reverse the problem of unsustainable fishing. Just look for their MSC blue label symbol at the grocery store to help purchase ocean friendly and sustainable seafood for your family. Like I did for this One Pan Salmon and Rice. You can find MSC certified sustainable seafood at hundreds of grocery stores and on all your favourite types of fish and seafood.
The Perfect Pairing
What goes better with a One Pan Salmon and Rice meal than a crisp glass of white wine? Or rather a white wine and lemon sauce. Or both!
Nobilo is a classic Sauvignon Blanc from New Zealand that is crips and refreshing and perfect for summer. It’s also extremely reasonably priced, which is something I always look for in my wine.
Family Friendly Meal For The Win!
These two fantastic ingredients come together in this delicious One Pan Salmon and Rice dish. And you know how we feel about our one pan meals. They are super simple and result in way WAY less clean up. Always a plus for any recipe. And this dish is no exception.
It also works extremely well as a deconstructed meal – I doubled the rice and broccoli and served both plain on the side along with some extra MSC certified salmon. Being considerate to the little one’s palates, without catering. I find I also end up throwing out a heck of lot less food this way because my kids are more likely to eat the meal when it’s presented in this way. So less food waste is yet another way to help feed your family sustainably.
Serve with the white wine sauce on the side and a glass of wine (or two) for the adults, and you’ve got one pretty darn perfect and delicious family friendly meal.

One Pan Salmon and Rice with Lemon White Wine Sauce

Ingredients
- 1 white onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup jasmine rice
- 2 Tbsp canola oil
- 1 cup vegetable broth
- 1 cup water
- 1 Tsp salt (divided)
- 1 head broccoli (chopped)
- 1 red pepper (chopped)
- 1 cup flat leaf parsley (chopped)
- 1 lemon (zested)
- 1 Pound skinless MSC Certified salmon (cut into 4 equal pieces)
Sauce
- 2 Tbsp butter
- 1 Tbsp canola oil
- 1 clove garlic (minced)
- 1/3 cup Nobilo Sauvignon Blanc
- 1 lemon (juiced and zested)
- salt and pepper (to taste)
Note
You can sub in different vegetables for the broccoli and red pepper - zucchini, green beans, asparagus, or cauliflower would all work great!
Directions
1. | Preheat oven to 375 degrees. |
2. | Place onion, garlic, rice, 1/2 tsp salt, broth, and water in a 9 x 13 pyrex and mix to combine. Cover with foil and bake for about 20 minutes. Add broccoli, red pepper, and parsley and mix to evenly distribute. Place foil back on and bake for another 10 minutes. |
3. | Place salmon on top, sprinkle with remaining 1/2 tsp salt, and bake uncovered for about 7 minutes. Switch oven to broil and cook for another 5 minutes until salmon is brown and cooked through and rice is brown and crispy around the edges. |
4. | Remove and drizzle sauce all over top. Serve immediately. |

5. | In a medium skillet heat butter and oil over medium heat. Add garlic and cook for about 1 minute. Add wine, lemon juice, and lemon zest and cook until reduced by half, about 5 minutes. Remove from heat and season with salt and pepper. |
