Had I known spending 5 minutes to prep a chicken and a couple of humble vegetables would turn into such a delightful meal, I would’ve started slow cooking whole chickens a looong time ago.
And the gravy. THE GRAVY.
I’m going to keep this simple, because there is not a single complicated thing about this perfect-for-the-first-snowflakes-of-the-season meal.
What you get in the end, is:
- Moist and tender, fall-off-the-bone chicken with a hint of smokiness.
- A sweet and savoury onion gravy that gives your insides a big warm hug.
- Sweet slow cooked carrots and onions infused with all the aforementioned goodness.
Do not forget to serve with a side of mashed potatoes, or rice or whatever gravy sopping-up vehicle you choose.

Whole Slow Cooker Chicken and Gravy
Ingredients
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 3.5 to 4 pound whole chicken
- 1 Medium onion (cut into 5-6 wedges)
- 2-3 Medium carrots (peeled and roughly chopped)
- 2 tablespoons corn starch
- salt and pepper (to taste)
Directions
1. | In a small bowl, mix salt, pepper, onion powder, garlic powder and paprika. Rub mixture evenly over the chicken. |
2. | Place onion and carrots in the bottom of the slow cooker. Place seasoned chicken, breast down, on top. |
3. | Cook on low for 6-7 hours, until tender and chicken pulls away easily from bones. |
4. | Carefully transfer chicken from slow cooker to a plate. Cover loosely with foil to rest. |
5. | Strain slow cooker drippings into a small sauce pan and bring to a simmer over medium heat. There will be about 2 cups. Reserve carrots and onions, if desired. |
6. | In a small bowl, whisk together corn starch and 2 tablespoons of water. Pour into drippings and simmer until thickened, about 2 minutes. Season with salt and pepper to taste. |
7. | Serve chicken with reserved carrots and onions and drizzle generously with gravy. |
