5 Make-Ahead Big Batch Breakfast Recipes

I thought that since we are all staying home every day, the weekday morning rush would be a little less hectic.

Well, I was wrong.

If anything, it’s the same level of insanity, maybe even a tad more. Trying to get ready for a long ~~hour~~ day of homeschooling a 6 and 4 year old while trying to keep a teething 7 month old occupied has it’s challenges. And since my brain isn’t running at full speed these days, having some easy, big batch, make-ahead breakfast options at my fingertips sure helps to make these mornings a little bit more manageable. That and an extra large mug (or two) of coffee.

So without further adieu, here are FIVE of our favourite make ahead, big batch breakfast recipes!

Bacon and Egg Breakfast Tart

If breakfast and pizza had a baby, this would be it! You’ve got bacon, eggs and cheese all wrapped up in a buttery puffed pastry crust. Need I say more?!

Overnight Pumpkin Baked Oatmeal

A friend recently reminded me of this recipe and how easy it is to put together. It’s also composed entirely of pantry staples. No pumpkin? No problem! Sub some mashed banana or applesauce.

If I had to pick a favourite, and please don’t make me, this would likely be it. Peanut butter has got to be one of my all time favourite foods and in combo with the oats and apples, it’s like getting a giant warm hug for breakfast.
