Popcorn – the perfect movie-watching-baseball-enjoying snack. I think my husband could live on popcorn alone. And it seems I have also become somewhat of a popcorn addict.
At 33 weeks pregnant, I seem to be having a pregnancy “craving” of sorts. Or, just an excuse to eat this crunchy addictive snack every night of the week. And what better way to satisfy this so-called “craving” than with the sweet and salty combo of peanut butter, honey, vanilla, and cinnamon.
But being a whole grain packed with fiber, popcorn is an excellent choice for an afternoon or evening snack. And you can also feel good about pouring on some liquid peanut butter, adding some healthy fats and protein to your nighttime bowl of popped kernels.
Use our stove top method or paper bag in the microwave quickie to pop up some air-popped kernels. Pop the peanut butter mixture in the microwave and you are good to go.
Now if you’ll excuse me, I must go have my nightly bed-time snack.
Vanilla-Cinnamon Peanut Butter Popcorn
- 1/4 cup natural peanut butter
- 1 Tbsp honey
- 1/4 Tsp cinnamon
- 1/4 Tsp + a pinch salt
- 1/4 Tsp vanilla
- 1/3 cup popcorn kernels
This is hands-down my new favourite afternoon or evening snack. To jazz it up a bit, you could add a handful of chopped nuts, chocolate chips, or raisins. Try it with almond butter too!
||Pop popcorn using your method of choice (stovetop, air-popper, microwave) and set aside. |
||Combine peanut butter, honey, cinnamon, vanilla, and 1/4 tsp salt and microwave for 20 seconds. Give it a stir. |
||Pour over popcorn and mix until the kernels are all coated in this delicious peanut butter mixture. Add a pinch of salt and mix one more time. Dig in! |
