Overnight Spinach and Cheese Strata

Still riding the comfort food train over here. Anyone else?

It seems that for a meal to be truly satisfying for me these days, it must contain some form of carbs and cheese. I guess that shouldn’t come as a surprise since 99% of the recipes we post here follow that formula.

It should also come as no surprise then that this Spinach and Cheese Strata is a household favourite for any meal. It was a recipe we originally created for our friends at Canola Eat Well and it’s become a staple ever since. And it’s got bread and cheese. Satisfaction guaranteed.

It’s the perfect vehicle for using up some bread about to go stale. Actually, it works best with a loaf of day or two day old bread as it allows it to soak in that egg mixture even more. We use frozen spinach here, but if you’ve got fresh kicking around you could cook that up with the onion too.

We eat this for dinner just as much as we do for breakfast. Feeding a family? You can easily deconstruct it for a perfect family friendly meal. Leave some of the baguette and cheese plain on the side and scramble up an egg or two if this is a new dish for your kiddos.

While it comes together lickety-split, it does need some time in the fridge to let the bread get all soaked up in that delicious cheesy egg mixture. So make sure to do a little planning and assemble it the day before your planning on digging in.

Overnight Spinach Strata

Ingredients

  • 2 onions (diced)
  • 2 Tbsp canola oil
  • 1/4 Tsp salt
  • 10oz package frozen chopped spinach (defrosted and drained)
  • 1 multigrain baguette (cut into cubes)
  • 9 eggs
  • 2 Cups 2 % milk
  • 1 Tbsp dijon mustard
  • 1/2 Tsp salt
  • 1 cup grated cheddar cheese
  • 1/2 cup grated parmesan cheese

Note

Feel free to use any leftover bread you have on hand instead of a baguette. It should equal about 6 cups of bread cubes. You could also substitute any cheese you have on hand - mozzarella, fontina, gouda or asiago could be used in place of the cheddar and parmesan.

Directions

1. Heat canola oil in a large non stick skillet over medium high heat and add onion. Saute for about 5 minutes until soft. Add 1/4 tsp salt and spinach stir to combine. Remove pan from heat and set aside.
2. Spray a 9 x 13 inch baking dish with cooking spray and evenly distribute bread cubes along the bottom of the dish.
3. Evenly spread spinach mixture on top of the bread and then sprinkle the cheese over top.
4. In a large bowl whisk together eggs, milk, mustard and salt. Pour over bread and press down lightly to make sure all the bread is soaked in the egg mixture.
5. Cover with plastic wrap and place in the fridge overnight.
6. In the morning or when you are ready to eat, preheat the oven to 350 degrees, remove plastic wrap and bake for 40-45 minutes until golden brown and cooked through.
