Say hello to your new favourite summer dessert. Or snack. Or breakfast if you’d like – there is peanut butter.
Is there any other dessert that screams SUMMER more than the classic s’more? We think not.
But what to do when you are without a campfire? Fear not friends, we have the solution for you. S’mores Bars to the rescue!
And just when you thought s’mores couldn’t get any better, we’ve gone and added peanut butter to them. GASP! Yes, peanut butter. Because if it were up to us, any dessert with chocolate would come with a slathering of peanut butter. And once you try these bars, you too will agree.
They couldn’t be simpler to make either – a super easy graham cracker crust, lots of chopped chocolate, a few good dollops of peanut butter, and a layer of marshmallow. BOOM! The one thing you want to be careful of is letting the chocolate cool before broiling the heck out of it. Otherwise you will be left with a large puddle of chocolate and peanut butter. Doesn’t sound half bad we know, but trust us, it’s much better when it all stays together.
Oh and another note – DO NOT walk away from that broiler. Even if you think you have time to run to the washroom or finish washing the dishes or take one more sip of wine. You don’t. We speak from experience here. Those marshmallows are going to brown FAST! You’ve been warned.

Peanut Butter S’mores Bars

Ingredients
- 28 graham crackers
- 1/4 cup canola oil
- 1 Tbsp sugar
- 1 egg (beaten)
- pinch salt
- 12oz bittersweet chocolate (chopped)
- 1/2 cup natural peanut butter (melted in the microwave)
- 36 full sized marshmallows
Note
These Peanut Butter Chocolate S'mores Bars are a great make-ahead summer dessert. You can prepare them a couple hours ahead of time and broil right before you are ready to serve. It's important to let the chocolate/peanut butter layer cool slightly before placing them back in the broiler so it has a chance to set. These bars are also great the next day cold from the fridge!
Directions
1. | Preheat oven to 350 degrees and spray a 8 x 8 pyrex dish with cooking spray. |
2. | Place graham crackers in a food processor and process until finely ground. Pour into a large bowl and add canola oil, sugar, egg, and salt and mix to combine. |
3. | Press down evenly in prepared baking dish and bake for 10-12 minutes until starting to brown. Immediately sprinkle chocolate on top and place back in the oven for another 2 minutes until chocolate starts to melt. |
4. | Spread chocolate overtop of graham cracker crust and dollop melted peanut butter on top. Gently spread peanut butter over chocolate (it's okay if some of it mixes in). |
5. | Place marshmallows on top of the chocolate/peanut butter layer. Let bars cool slightly. |
6. | Right before you area ready to serve, preheat broiler and place pan on the upper rack in the oven. Broil for 1-2 minutes, until marshmallows are lightly browned. Make sure to keep an eye on them as they go from brown to burnt fast! |
7. | Remove from oven, let cool for a couple minutes, and dig in! |
