We’re having a love affair. And it’s with halloumi cheese.
This is where you hop in your car and hit the grocery store to pick some up immediately. And if your grocery store doesn’t carry it, you march on over to the store manager’s office and demand a supply!
You shouldn’t have to go on living without it.
Direct from the refrigerator case, it’s a dense, chewy, briny cheese. If you try it fresh and cold you’ll be probably wonder what all the hullabaloo is about. But warm halloumi cheese? That’s magic.
Sliced or cubed and then grilled, fried, sautéed or roasted gives you a crispy, caramelized exterior with an ooey gooey savoury centre.
We’ve paired it here with vegetables that sweeten with roasting, and to make it a meal, served it over chewy whole grain farro and spicy arugula. And if that’s not enough, we’re dressing it all with a lemony tahini dressing that’ll bring it all together for a big party in your mouth.
Now if the cheese and veggies don’t quite make it over to your salad bowl, we get it. It’s simply heaven right out of the pan too.
We take every opportunity we can to use this dressing, though.
This is a perfect family salad. And before you say ‘pffft, ya right. my kid would never eat that’, try serving all of the components separately and substitute with some toppings you know your family likes. The deconstructed salad with lots of different ingredients is a great way to get families eating the same meal together – which as you know, if our favourite nutrition tip.
