Direct from the refrigerator case, it’s a dense, chewy, briny cheese. If you try it fresh and cold you’ll be probably wonder what all the hullabaloo is about. But warm halloumi cheese? That’s magic.
Sliced or cubed and then grilled, fried, sautéed or roasted gives you a crispy, caramelized exterior with an ooey gooey savoury centre.
We’ve paired it here with vegetables that sweeten with roasting, and to make it a meal, served it over chewy whole grain farro and spicy arugula. And if that’s not enough, we’re dressing it all with a lemony tahini dressing that’ll bring it all together for a big party in your mouth.
We take every opportunity we can to use this dressing, though.
This is a perfect family salad. And before you say ‘pffft, ya right. my kid would never eat that’, try serving all of the components separately and substitute with some toppings you know your family likes.
