It’s been a hot minute since we posted a sheet pan meal recipe. My sincerest apologies, we’ve been having a love affair with rhubarb at the moment. So without further ado, I give you this Curried Sheet Pan Chickpeas and Halloumi.
This isn’t our first sheet pan halloumi recipe rodeo. Remember that Sheet Pan Halloumi and Vegetables? Yeah, so do I. And Erin and I still make it on the regular. Well, now you can add this beauty to your dinner rotation.
If you’ve never roasted chickpeas before, now is your chance! They get all crispy and toasty and the curry flavour really compliments them, as well as all the other veggies in this Sheet Pan Chickpea and Halloumi meal.
The great thing about sheet pan meals is the minimal clean up. Like so very little you are going to think you missed something. They also make the perfect family friendly meal. Everyone can pick and choose the components they want to eat. You could even go the deconstructed route and leave some of the chickpeas, veg, and halloumi plain on the side for your kiddos or any member of the family who may not love that curry flavour.

Curried Sheet Pan Chickpeas and Halloumi

Ingredients
- 540ml can of chickpeas (drained and rinsed)
- 2 small zucchini (sliced horizontally)
- 1 red pepper (seeds removed, sliced)
- 1 cup grape or cherry tomatoes
- 300 Gram halloumi cheese (cubed)
- 2 Tbsp canola oil
- 1 Tbsp honey
- 1 Tsp curry powder
- 1/2 Tsp salt
- yogurt & chopped parsley (for serving)
Note
You could substitute other vegetables you have on hand - asparagus, red onion, or broccoli would all work great.
Directions
1. | Preheat oven to 425 and line a baking sheet with parchment paper. |
2. | Place chickpeas, zucchini, red pepper, tomatoes and halloumi cheese on prepared baking sheet. Drizzle with oil and honey and sprinkle with curry powder and salt and stir to evenly coat. |
3. | Make sure ingredients are in an even layer and bake in the oven for about 20 minutes, until vegetables are soft and halloumi is brown. Remove and sprinkle with parsley. Serve with yogurt if desired. |
