With September and all the “back to school” craziness behind us, you would think life would slow down just a tad. Well, I don’t know about you, but that sure hasn’t happened in our house.

The fall season could also be called “slow cooker season,” and this lentil daal is the perfect recipe to put that slow cooker to good use. It’s a great vegetarian “set it and forget it” main dish that is all hands off. It is perfect on it’s own, or with some rice or naan to soak up all the delicious sauce.

Whenever I make this dish, I always kick myself for not making a double batch. The traditional ratatouille gets cooked up in the oven, rather than the stove top, adding so much more caramelized flavour to those veggies.
