When it comes to a ‘quickie meal,’ pasta really can’t be beat.
And I’m going to apologize, you may only be seeing quickie meals from my end for the next, oh, 2 years. Life is just busy with a capital B. Anyone out there relate?
With everything going on in our lives these days, I crave meals I can put together without even thinking about. But also still want it to taste delicious, appeal to my newly picky 2 year old, and satisfy my 6 month preggo hunger. That’s not too much to ask is it?
Enter pasta. Specifically, a pasta that is so simple yet so flavourful, light, and satisfying at the same time. I mean, who doesn’t love pasta? And if you raised your hand, I don’t believe you.
This pasta gets all of it’s wonderful qualities from a pan full of grape tomatoes that when roasted, turn into a delicious sauce that beautifully coats these fettuccine noodles. The handfuls of parm that come with it don’t hurt either.
This dish takes the classic slow cooked ratatouille and turns it into a quick roasted version. Don’t you just love it when the oven does all the work for you?
Quick may be the name of the game around my house these days, but that doesn’t mean you have to sacrifice on taste.
