If they’re done right that is.
While on vacation recently, guests filed in to the resort restaurant each morning to enjoy a breakfast buffet where one of the many egg options was hard boiled. When I excitedly split an egg open one morning, I found the white to be inedibly rubbery and the dry, powdery yolk covered in a grey film.
Sound familiar?
These are the signs of an overcooked egg – definitely enough to turn folks off from hard boiled eggs for good!
My simple yet specific hard boiled egg recipe for home is successful every time. The centre of the yolk will be just just cooked through yet still soft, creamy and moist.
Egg salad stuffed inside white bread triangle sandwiches, also known as ‘funeral sandwiches’ to my husband, are one of my guilty pleasures.
We’ve always got eggs and mayo kicking around at home so egg salad sandwiches are satisfying meal option when the fridge is otherwise empty. More often than not there are lots of other yummy egg salad compatible items available to kick it up a notch too.
If your eggs are cooked perfectly and the yolk is still moist, there won’t be a need for gobs of mayo either. This combination adds fresh, bright flavour and a satisfying crunchy texture.
If you don’t have any fresh bread available for a sandwich, egg salad is perfect in a wrap, a lettuce leaf or spread on top of a crackers too.

To hard boil perfect eggs, cover them in a saucepan with cold water. Place over high heat and bring to a boil. As soon as the water boils, remove from heat, cover and let stand for 10 minutes. Run eggs under cold water for a minutes or so immediately.

Chop cooked eggs to desired consistency and combine with all other ingredients.

I think I have the hard-boiled egg making down. I learned it from my aunt when I was little and her tricks never fail me. This recipe, however, is something I need to print. YUM! Can I just say I LOVE LOVE LOVE eggs?! Egg salads and deviled eggs are two of my favorites.

Another great egg recipe! I was taught this same way to hard boil. Now I add just a touch of white vinegar and the peel comes off so easy.
No pieces of egg left on the shell.

I did not know the vinegar technique. I will definitely be trying it, because using fresh eggs for hard cooked eggs always ends in a peeling disaster at my house! Thank you, Terry!
