If you were to take a peak into my pantry on any given day, you would likely find a can or two of chickpeas sitting comfortably next to my back stock of cereal, oats, peanut butter, and marshmallows…all of the essentials.
A good old can of chickpeas is a quick lunch or dinner hero. But they go beyond salads and hummus. A quick toss in the oven gives you a crunchy snack perfect for the 4pm munchies.
And I bet all of the ingredients for this recipe are sitting right in your pantry now too…just move the marshmallows aside and grab your oil, salt and pepper, and seasonings of your choice, and in just 30 minutes, you have a crunchy, spicy, and salty snack that puts your usual pop corn or chips to shame.

Ingredients
- 1 can chickpeas (drained, rinsed, and patted dry with paper towel)
- 1/2 Tbsp olive oil
- 1/2 Tsp salt
- 1/4 Tsp pepper
- 1/2 Tsp cumin
- 1/2 Tsp garlic powder
Note
You can change up the spices to suite your preference. If you want something sweeter, add some cinnamon and honey. For a bit of added spice, try chili powder and cayenne. Or season simply with salt and pepper...the choice is yours!
Directions
1. | Preheat oven to 400 degrees. Combine chickpeas and olive oil and toss to coat. |
2. | Add salt, pepper, and spices and toss again to coat. Spread chickpeas on a parchment lined baking sheet and bake for about 30-40 minutes or until browned and crispy. |
