Which I just realized is a mere 2 weeks away. How the heck did that happen?!
The last couple days have been spent frantically messaging friends and family inquiring about all things back to school shopping. I’m just a tad behind. But have no fear – she has a lunch box!
This new stage in life gives me all sorts of anxiety – will she make friends? Will she like her teachers? Will she eat her lunch? She may have a shiny new lunch box, but it’s what’s inside that counts.
So with that, I give you some of our favourite lunches, perfect for back to school or work. We’ve stepped outside the sandwich box to help arm you with an arsenal of creative and delicious lunch recipes to beat the boredom that can be school and work lunches.
Now, there’s a part of me that’s kind of excited to start packing lunch. Don’t look at me like that! But there is this other part that’s thinking, okay, now I have to add an extra layer to my weekend meal prep. Well, wouldn’t ya know it, we have the perfect solution!

Sweet Potato Black Bean and Kale Burritos
Homemade frozen burritos are one of our lunch staples. The best part? You can make a batch ahead of time and store them in your freezer. You can defrost overnight and eat at room temp or heat up in a microwave if you have access to one. The flavours are easily interchangeable to suit everyone’s taste.

Asparagus and Quinoa Salad
I think we’ve each made this one at least 10 times. No joke. It is so easy and so delicious! Throw in a can of chickpeas or some leftover roast chicken and you’ve got one heck of a much. Make a double batch on the weekend and enjoy it all week.

One of our most popular recipes of all time, and for good reason. Easy, kind friendly, and freezable, pack a couple of these cheesy patties in your child’s lunch box and they are sure to be a hit!

We always keep a package of frozen edamame in the freezer and it gets put to good use in this Asian twist on the classic bean salad. It’s a meal as is, or add in any leftover protein or grain that you have leftover in your fridge.
