Asparagus and Cheese Tart
Erin and I have both made this many times and it is always a hit. Perfect for your Spring potluck, an outdoor picnic brunch, or casual dinner at home. Puff pastry makes this such an easy and weeknight friendly tart. Click for the recipe here.
Roasted Asparagus Soup
A creamy and dreamy Spring soup, minus the cream. Although, the optional last minute creamy finish is totally awesome too. Click for the recipe here.
Spring Quinoa Salad with Asparagus, Dates, and Oranges
This recipe came about one Passover seder many moons ago. And it is still being made in my house every spring. Perfect as a side or a light lunch. Click for the recipe here.
Asparagus and Quinoa Salad
You may notice we have a thing for Spring quinoa salads. And it doesn’t get much simpler than this combo of fresh asparagus, lemon, and feta. Click for the recipe here.
Shaved Asparagus Pizza
Asparagus on pizza? It’s true! And it’s delicious! This is such a quick and easy pizza that looks super impressive. You could make your own dough or use your favourite store bought variety. Click for the recipe here.
Spring Pizza
If you haven’t tried an egg on your pizza before than you are seriously missing out. The combo of the fresh veggies, salty prosciutto, and creamy cheese is definitely a winner. If you’re vegetarian, leave off the prosciutto – it will be just as delicious. Bonus points to this one for being appropriate for breakfast, lunch, or dinner. Click here for the recipe.
Garlic and Lemon Grilled Shrimp and Orzo Salad
Looking to jazz up your next barbecue? This shrimp and orzo salad is the perfect way to do it. A great change from the usual meaty fare. Click for the recipe here.
Rhubarb Muffins
I can honestly say that these are some of the best muffins I’ve ever tasted. Lightly sweet and perfectly moist, they also freeze great so they are the perfect addition to your weekend meal prep. Click for the recipe here.
Strawberry Rhubarb Crumble
Is there anything more classic than a strawberry rhubarb pie? This crumble is just as delicious but way way easier. Perfect for dessert with some vanilla ice cream and for breakfast with a dollop of yogurt. Click for the recipe here.
Strawberry Rhubarb Pavlova
Would you look at this beauty? Don’t you just want to dive in? Pavlova is one of those desserts that will wow your guests, but is really a cinch to make. If you haven’t tried your hand at it before, this is the perfect recipe to get your pavlova on. Click for the recipe here
Think that’s enough deliciousness to get your Spring eating off on the right foot, don’t you agree?
