These tacos came about on a whim. With a can of black beans staring at me in the pantry and some corn tortillas in the fridge on their last leg, these black bean tacos were born.
These actually come together in under TEN MINUTES! That’s right – a ten minute meal folks. With all the back to school craziness in my household plus the new addition of a tiny human, the need for quick and easy meals has never been more necessary.
But don’t think this quick prep and cook time means you lose out in the flavour department. You are basically cooking up a super simple homemade version of refried beans loaded with all the flavour of the traditional variety. Then the world, or rather the taco, is your oyster! Load ’em up with whatever you like!
I like these black bean tacos topped with some coleslaw (the bagged variety over here), some shredded cheese, salsa and guacamole. But you do you! If you’ve got some leftover chicken hanging around, shred it up and add it in. Have feta instead of cheddar, go for it! And as you can imagine, they were a hit with the kiddos. Any sort of DIY meal is always a grand slam in the family meal department. Everyone can pick and choose what they want to add, giving the little ones that sense of control and independence they so crave.
Leftovers also make for an excellent taco salad the next day. Serve with lots of tortilla chips for dipping!

Ingredients
- 1 Tbsp canola oil
- 1/2 large onion (diced)
- 1/4 Tsp garlic powder
- 1/2 Tsp chili powder
- 1/2 Tsp cumin
- 1/4 Tsp salt
- 1 540 ml can black beans (drained and rinsed)
- 1/4 cup water
- 8 corn tortillas
- 1 package coleslaw mix
- 1 cup old cheddar (grated)
- salsa, guacamole, sour cream (to garnish)
Note
If you like things spicy, serve some of your favourite hot sauce on the side for topping!
Directions
1. | Heat a medium pot over medium high heat and add canola oil. Add onion and cook for about 3-4 minutes, until softened. Add spices and cook for another minutes. |
2. | Add beans along with water and cook, mashing lightly with a fork or potato masher leaving a few whole, until warmed through. |
3. | Divide bean mixture among tortillas, top with slaw, cheese, salsa, guacamole and sour cream. Dig in! |
