Before you automatically shun this post because the word ‘tofu’ is in the recipe title, let me me plead my case.
And if you’re still not willing to budge on the tofu thing, this recipe would be perfectly delicious with ground meat (of any kind) too.
This tofu has pizzazz. It’s got a firm and satisfying texture and it’s loaded with flavour without the use of a marinade or a bucket of oil for deep frying.
All of that in combination with sweet and crispy veggies and a mouth watering homemade peanut sauce and this quickie meal will have you not only accepting tofu in to your life, but treating it with the respect it deserves.
In addition, if you too are on a quest to prepare lighter fresh tasting meals in the midst of this long winter, this recipe hits the nail on the head.
I originally sought Boston or Bibb lettuce to use for the wraps, but didn’t find any fresh enough for my liking and instead used Iceberg with great crispy success.
You can certainly replace the basmati rice with something more whole grain-y too, or opt to leave it out altogether. Just to be clear though – in no way are carbs the enemy.
I just can’t get over how great this technique for preparing tofu is. And for all you tofu virgins out there, using this technique would be a perfect way for you and tofu to get to know one another. You might even fall in love…

Tofu Lettuce Wraps

Directions
Peanut Sauce
1.
Heat canola oil over medium heat. Sauté shallot until soft; about two minutes. Add water, peanut butter, hoisin and hot sauce. Heat and whisk until smooth. Remove from heat and add lime juice.
Tofu Filling

Heat sesame oil over medium heat. Add 1/2 the green onions and sauté for 1 minute.

Add tofu and sauté for 4-5 minutes, stirring occasionally until it starts to brown.

Add soy sauce, ginger and sriracha, sautéing for another 1-2 minutes. Remove from heat

To assemble wrap, add 1/4 cup of rice, about 1/2 cup of the tofu to lettuce leaves. Top with green onion and sliced peppers and cucumbers. Drizzle with peanut sauce.
