Oh, and it feeds a crowd because you use an entire can of pumpkin, a full tetra pack of vegetable broth and a full can of coconut milk. No awkwardly saving a partial container of anything here, folks.
Plus, there’s PEANUT BUTTER.

Indian Spiced Pumpkin and Lentil Soup

Ingredients
- 1 tablespoon canola oil
- 1 Medium onion (finely chopped)
- 1/4 cup mild Indian curry paste (I used Patak's)
- 796mL can pumpkin
- 400mL can coconut milk
- 4 cups vegetable broth
- 3/4 cups dried red lentils
- 1 tablespoon brown sugar
- 2 tablespoons peanut butter
Directions
1. | Heat canola oil in a large pot over medium-high heat. Add onions and sauté for 2-3 minutes until softened. Add curry paste and sauté an additional minute. |
2. | Add remaining ingredients, expect peanut butter. Bring to a boil, stirring frequently as the lentils will stick to the bottom of the pot, reduce heat to medium-low and simmer for 15 minutes until lentil softened and soup thickened. |
3. | Stir in peanut butter, remove from heat and serve. Top with roasted, salted pumpkin seeds. |

Yum!!! Made this today and absolutely love it. Now, mine became Thai spiced pumpkin & lentil soup because I had a part jar of Thai red curry paste that I needed to use up but otherwise I changed nothing. Hubby even went back for seconds! Question for you – do you think this would freeze well? I don’t think I need to worry abut it because there are only 3 servings left but just in case…

Sounds delicious! Absolutely you can freeze it. Last time we made it, half got frozen and it defrosts really well.

This soup is so quick and delicious! We like it a little spicier so I added 2 tsp of Madras curry powder but otherwise followed the recipe exactly. It’s almost like eating butter chicken sauce with lentils…except MUCH healthier! Thanks for posting it!
