My eldest daughter started Junior Kindergarten this week.
And as I returned home from dropping her off and sat down to write this post, ready to share all of these delicious snacks, I was at a loss for words. My daughter is in school. When did this happen?
It feels like just yesterday I was staring down at this tiny newborn and now there’s this little lady in front of me who confidently gave me a hug and skipped away to join her new classmates for circle time. There may have been a few tears – but none of them were hers.
I don’t always deal so well with change. Does anyone really? You know what helps me? Baking. There is something cathartic about it. Some people shop, others clean, I bake. Which leads me to these snacks.
With the start of school comes the start of packing that lunchbox. We’ve already shared our favourite school lunches, but if you thought you were done there, you were wrong! Because we’ve got to send not one, but TWO nut free snacks. Well don’t ya worry. We’ve got you covered.

And many of them can be made ahead of time and stored in the freezer for whenever you need them. Meal prepping at its finest!

These muffins were DEVOURED by my girls. They are delicious as is, but also work well with some raisins or chocolate chips thrown in. They freeze beautifully and also make a great on-the-go breakfast.

This has to be the best 2-for-1 deal in town! You’ve got two snacks done right here and the best part? No waste! Eat them together, on their own, or turn it into more of a meal with some yogurt and cereal.

I just baked up a batch of these over the weekend and they are almost gone! The tahini stands in for your usual nut butter to make these perfect for a lunchbox treat. We’ve added raisins but have also substituted chocolate chips. Or you can go crazy and use both!
